Sweet victory
I did it. I did it. I did it.
I made something and Ernie actually CLEANED his bowl! It was a simple chicken congee.

I used to sometimes used boxed chicken broth but this time when I bought it, we found it to be somewhat bitter. So this time I tried a slow cooker. I used one cup of Nishiki rice, a teaspoon of kosher salt (needed a lot more), two boneless, skinless chicken breasts and added eight cups of water. Yep, plain old water. I put it on high and let it go, mmmm, roughly 4-5 hours. The chicken breast shredded easily with a fork. I threw some frozen peas in and put a drizzle of soy sauce (about a teaspoon) on top. Boneless chicken breast can be somewhat unforgiving but this was perfect.
Sweet, sweet victory. It wasn't a huge bowl but he ate it all. ALL. And there's lots more for tomorrow.
