Random Notes from the Sandwich Life
1. Damn, I was sorry to miss Music City Roots on Wednesday night. My beloved Kevin Welch played, with Fats Kaplin and Dustin Welch no less, as well as the great Sid Griffin (Long Ryders) in the Coal Porters....and Ron Sexsmith just to top things off.... Oh, and Peter Cooper hosted, starting off the evening with a song. Not too shabby! The good thing about it is that it's all archived....
2. Lord help me but I battled a computer half the day yesterday. I think it broke me. My muttering began to sound like Dr. Seuss as I repeated "I do not get this, No I don’t, This I do not get!" over and over and over. Geesh.
3. On a brighter note however, I made a fabulous dinner the other night despite myself. We got home a bit after 8:00. I stood at looked at the refrigerator....there was food in it but I just didn't feel like cooking. I poked halfheartedly at things...closed the door....opened the door again, poked some more and finally told myself I had make something...we had NO excuse to order food. I had a couple of boneless skinless chicken breasts. I browned them in a cast iron skillet and finished them off in the oven for a few minutes. Then I set them aside and tossed some garlic and chopped lacinato kale in the pan. I stirred it a bit and then went and stared at the refrigerator again. I took the dijon mustard, some chicken stock and cream out (the amazing thing is actually that we had all those things sitting there....I mean I always have mustard....but not the others. I put in a heaping tablespoon of mustard, a similar amount of cream and then about half a cup of chicken stock and cooked it all til done, tossed it with leftover brown rice and served with the chicken.
It was AMAZING! The mustard sharpened it a bit, the small amount of cream wasn't enough to make it rich but it just smoothed the flavors out. I was utterly delighted with myself. I wish I'd taken a picture....maybe next time. Oh, and I threw some tarragon in as well. It's kind of a mild flavor for kale but it seemed perfect for the mustard sauce....
4. I can't help it....as much as I love snow and winter I am getting sucked into pining for spring. I ordered my flowers (plants and seeds) from Select Seeds. Now I have to order my vegetable seeds. I'm thinking a couple of kinds of kale and swiss chard, brussels sprouts, zucchini, green beans, maybe spinach....
5. No big plans for the weekend. Tomorrow we might try to hit one of our favorite antique shops a town or two over...haven't been there in awhile. I feel like getting out of town and driving.... There are a couple of shows coming up in the next few weeks that we'll hit to get ready for our show...and we also need to go through boxes in the basement.
6. It's killing me that Kane Welch Kaplin are playing in Columbus, OH at the place we saw them last year (yes, that was a YEAR ago) and we can't make it as I have to work that day. Oh, oh, oh that would do my heart good. Oh well, we've got Pat DiNizio coming up and Phil Lee the following month. Can't be greedy I guess....
7. Battles with Owen last night....no video games today.
8. It's Friday, it's Friday, it's Friday! It is almost ridiculous how much I look forward to Friday lunch with my husband.....almost ridiculous....
