A New Year's Feast

I started feeling a little better midday so I sent Ernie to the store to get a few things for dinner. We  (actually Ernie did most of this) did a chipotle roast pork (although I would recommend cutting the salt a bit from that recipe), made some quick refried black beans from canned beans, some garlic and a bit of the pan drippings from the pork. It was too salty so I added another can of beans and then it was great. We sliced up some avocado and we made the best salsa in the world. The trick to it? Well, a mixture of perfect little late season cherry tomatoes from our favorite farmers' market vendor Greg is evidently the trick. We'd picked up some vegetables from Greg before we went out of town and they were still sitting on our counter. They were a mix of every color imaginable of cherry tomatoes....red and brown and orange and yellow and purpley....just every kind you can think of. We just threw them in the food processor with a bit of chopped onion (rinsed a bit to take some of the bite away) and a jalopeno unearthed from the freezer....a dash of olive oil and a sprinkling of kosher salt and man....I can not even TELL you how good it was. Not as sweet as high season tomatoes but fragrant and earthy and bright. It was wonderful. We also attempted homemade flour tortillas. They were good but I'm not sure they were great enough to warrent the work. I think, like pie crust...ahem....that it's a feel thing though...so I am intrigued. Anyway, the whole thing was spicy and hearty and bright....and pretty damn perfect if I do say so myself. A good start to the New Year!
