Shrimp and Light

Light at the end of the tunnel that is.....because I see progress....I'm definitely making progress. I went in to work Monday and functioned pretty well for half a day. Then I kind of hit a wall where I was just staring at my computer in a daze. I went home a little early but after laying down for awhile I began feeling better again. YAY!

The night before I had planned a shrimp dinner for Ernie and me but by the time we were going to eat it seemed easier to just steal a piece of the pizza we'd gotten for Owen and his friend Eamon. So last night I had shrimp all prepared and sitting in the refrigerator. All we had to do was saute it in some olive oil, add some parsley, cook some swiss chard to have on the side and serve with some crusty bread for sopping up the juices.

Good GOD but it was good!

I think the overnight in the refrigerator probably helped....all the flavors just mellowed together....it was wonderful. I pondered it after I ate and wondered if a few red pepper flakes would have helped...and they might be nice but overall...it was perfect as is.....

Shrimp with Orange, Garlic and Spices

1 lb extra large (16-20 count) shrimp, peeled (and deveined if you're picky)
the juice of 3-4 oranges
2 oranges, peeled and sliced (or supremed if you're more patient than I am)
2-3 garlic cloves chopped or sliced coarsely
kosher salt and black pepper to taste
1-2 t smoked paprika
1/2 t ground cumin 
several tablespoons olive oil
1 bunch of flat leafed parsley, chopped coarsely 

Mix everything but the parsley and marinate overnight. Throw in a hot pan with some more olive oil and sautee at high heat until cooked through and just beginning to brown. Remove from heat, add some extra virgin olive oil and toss with parsley. Serve with crusty bread.

All the flavors mellowed together...even the parsley wasn't sharp....it was definitely greater than the sum of its parts....

And can I just say? I love the labels Ernie makes for our old wine bottles when we put our olive oil in them. Those little olives in place of the o's....sigh.
