Sola Gratia 2.8: Season Two, Week Eight

Northern girl that I am, I think I am finally coming to terms with collard greens. I don't know that I'll ever love them cooked for hours as is traditional but I am finding my way to loving them nonetheless. Sometimes when I've had young beautiful collard greens I have just sauteed them a bit and they've been great....but then again, they can have that bitterness....and while I like things that have a bite...sometimes it's too much.

So last night I took the collards from my half-share and pulled the stems off and cut them into ribbons. Then I put them into boiling, salted water for about 2-3 minutes. I took them out, drained them and set them aside until we were almost ready to eat. I just sauteed them for a few minutes in a little garlic, olive oil...and a few red pepper flakes. They were great. I think I just need to remember to blanch them a few minutes and then get rid of that water as it has the bitterness still in it. Once that is done they are delightful.

So, no recipe this week....just my northern girl exploration of collards. Thanks to Sola Gratia as always!

the sole leftovers. We grilled the corn and then put a little of the garlic olive oil that we used for the collards on the ears. Delightful!
