Avocados, Tobacco, and Postponing
I slept last night. I mean I SLEPT last night. I slept long and hard for the first time in I don't know when. It felt wonderful even though I'm a tad bleary right now. Lord but I love sleep. Thank you Sleep Gods!
We got randomly selected to participate in a NIH tobacco study so we agreed to do it and the interviewer came by last night and interviewed Ernie. Rather interesting and $60 in his pocket for doing it. The boys get to do it too but for some reason they didn't select me. Hmph. Because of all that I got started on dinner late (I know...surprise, surprise) but it turned out awfully well despite that (maybe because of that?).
I'm on an avocado kick as late and I almost wept when I halved the first one because it was so frigging perfect.....JUST the right texture.....absolutely beautiful....
I threw two avocados in the food processor along with a bit of microplaned garlic, some salt, some pepper and the juice of one lime. I whirred it up and then added about a half cup of cooled pasta water from the cooked pasta I haven't told you about yet. Oh yeah, I cooked up a bunch of whole wheat angel hair pasta. It actually wasn't supposed to be whole wheat but I didn't notice when I bought it. I hadn't loved whole wheat pasta when I'd had it in the past but for the angel hair it was just fine. Anyway, so I added the pasta water and finished up whizzing everything in the food processor until it was smooth. I mixed it with the angel hair and threw some chopped cilantro on top.
I made a salad of mixed green with some simple vinaigrette and then sauteed some shrimp in ground cumin, coriander, aleppo pepper and salt. I somehow used way too much salt so they were WAY salty but other than that it was delicious. The avocado pasta was definitely the star of the show however. I can't wait to make it again. As soon as we get to fresh basil season I need to try it with that.....somehow that sounds lovely to me.
So we ate very late and continued to binge watch some episodes of Scandal. Owen grew weary of helping us with X-box commands so he set it up on my iPad so I could control it that way. He just shakes his head at our incompetence....
In other news I am sorry to say we have had to postpone next week's Irene Kelly show. No worries though....we will be bringing her in August instead....watch for a confirmed date!!
