Rascal just named the post. I don't want to discourage his literary efforts so I went with it. What is UP with these cats sitting on the peninsula and keyboard all the time? This is new. As you can see, I remembered where I had another keyboard so I am back to, hopefully, a left shift key for caps, apostrophes, hyphens and more!

Lat night I made yet another, if not piss poor, than at least less than memorable eggplant parmesan. I love eggplant parmesan but it's not something I make but I love eggplant so I'd like to conquer it. My mother never cooked with eggplant and honest to God I discovered eggplant parmesan in the Allen Hall dining hall my freshman year.....later, when I started seeing the cute shaggy haired blonde guy from Record Service, he would take me to Dom's and I would always order eggplant parmesan....well, I suppose eggplant parmigiana, more correctly. 

I did a search here on my blog and I find a post stating that I made eggplant parmesan and it was great....but of course I have no idea what the recipe was. This version roasted the eggplant at high heat, rather than breading and frying, and there so much cheese that you just kind of tasted....cheese. Any recommendations are welcome. Or, other eggplant recipes for that matter....

I did make a beatiful side of some broccoli raabish broccoli shoots. Gorgeous...and from farmer Greg of course....

And on another note....Ernie felt good enough to sleep in our bed last night! YAYYYY! He's been in such pain that he's found it easiest to sleep on the couch as we can prop him up a little more easily there. He did pretty good last night though and I felt so much more whole with him by my side....
