Sunday Morning
Ahhhh. I finally started feeling a bit better yesterday. Last night I made chicken parmesan-esque sandwiches for the guys. I didn't feel like eating but I felt like fussing in the kitchen so I poached some chicken, shredded it and sauteed it with Italian seasoning and some breadcrumbs, tossed it with Owen's favorite Newman's sauce, toasted some buns on both sides, adding some fresh mozzarella. They looked pretty good. Later though I made myself a few falafel and put them in a bun and good God it was outrageously delicious. It's the second time I've made falafel from scratch, with dried chickpeas, and this time it was even better than the first time. This time I didn't have quite as much parsley as I would have liked but I've got a bunch of greens from Sola Gratia (and the first few boxes from Sola Gratia have been OUTSTANDING! I believe pro-rated shares are still available. We get a half share and it's enough for us as we like to still get other vegetables here and there). I blanched a bunch of kale and then added it to the soaked chickpeas, parsley, garlic, onion and spices in the food processor and ground it up. This time I ground it a bit finer and I think I liked it better...it also held together better. I was just making a few so I went ahead and fried them in a bit of oil. Today I will probably make the rest and bake them.
This morning I woke up to one of Ernie's fresh drop biscuits with ham and cheese on it. Such a nice way to start a Sunday. Now he's weeding and I'm.....not. It's such a nice grey day....I'm praying for storms. I need a good storm sky so we can all sit outside and watch it roll in...
Not a terribly productive weekend I must say but then again maybe this is what I needed.
Now that the next house concert has been cancelled I will focus on our next one up, which is Anne McCue. I am very excited about this one.....
