Friends, Tuna, and Howlin Wolf

All I could think last night, as Eva showed Ernie toy after toy, and held them up for his admiration, was, "the men don't know....but the little girls understand." And after that I thought THANK YOU, THANK YOU, THANK YOU for friends that can have drinks with me at the end of a long not-so-great day. I am so damn grateful for the friends we have made...the family of friends we have created; they are one of the greatest gifts I have ever received.

I love these people.

And the Mock Tuna Salad, which Ernie thought was actually tuna salad, was amazing. I am smitten. Although between that and the never ending batch of falafel I feel myself starting to turn into a chickpea. I'm not sure what Heather's exact recipe but it goes something like this (and I believe she said she didn't use the uumeboshi vinegar last night):

Chickpea of the Sea Sandwich

1 (15.5-ounce) can chickpeas, drained and rinsed

1/4 cup mayonnaise (or vegan alternative)
1 tablespoon whole grain mustard
1 1/2 tablespoons umeboshi vinegar
2 teaspoons celery seeds
1/4 cup chopped celery, from about one rib
2 tablespoons sliced scallions, from about about two scallions
Pinch cayenne pepper, optional
Freshly ground black pepper
2 to 4 slices whole grain or artisan-style bread
2 to 4 lettuce leaves, washed and dried well

Place chickpeas in the bowl of a food processor and pulse two or three times to roughly chop. Add remaining ingredients and pulse two or three times more to incorporate.
