Perusement

A quiet weekend thus far. Started Saturday with a 7 am work Skype call. I did my best to look awake. Later a wonderful brunch with my beloved friend Boo. I came home full of blood Mary and gluten but it was worth it. We hung out at home and I read a novel. We talked bout making dinner but ended up eating my brunch leftovers while Ernie and Leo made white chocolate chip cookies per my request. Unlike me, I know. My gluten fest will be over soon. I went to bed early and read some more. I've been reading a lot more of late and as long as I'm reading I feel no guilt about not cleaning my house, etc. so it all works out quite well.

Today I said I wanted to do something with the boys but now feel a lack of inspiration. Owen may have plans...hard to keep up with his schedule. I looked for a movie to watch but it's sunny out and I hate watching movies when it's sunny. Such problems I have.

We've got some pork in the slow cooker getting ready to bring to a friend. I've got some friends who are really suffering right now. My heart is hurting for them. So what do I do? I cook. It's a kindness for them to let me do something.

Owen got the old Harmony guitar we bought awhile back (wow, I just checked and it was a LONG time ago) restrung and cleaned up. Sorry for the bad picture but it is now living in Owen's room so I may not see it again...

Another bad picture, yeah, I know...BUT it was fantastic. I've realized my problem with spaghetti squash is that I fall into that trap of pretending it's pasta. Spaghetti squash with red sauce, etc....eh. Spaghetti squash with just garlic, onions and a ton of parmesan....wow. Amazing.

I, of course, can't find the online recipe I used, but basically it was simply cutting the squash in half, taking out seeds, then salt, pepper, olive oil on it and roast the halves cut side up for about 30-45 minutes at 400 degrees. Let it cool, scrape it out and add to some sauteed onions and garlic, with a good half cup or so of parmesan. It was utterly delightful. Sometimes you just have to get past the whole idea of trying to pretend that spaghetti squash or ribbons of zucchini are pasta, or that grated cauliflower is rice. I mean I love those things, but if you try to pretend they are something else you'll only be disappointed. Just enjoy them for what they are. And with those words to live by I am done because Owen cruelly won't let me post the first official photo of his band. Sniff.
