Bugs and Fritters and the Toms
I haven't posted in SO long. I've started posts a couple of times but not finished them and when I go back to them I think, "well, hell, I'm not feeling that way now....I can't post that." I've just been swamped at work and not had my work laptop which is what I usually write on.
I had lots of random, most likely uninteresting tidbits to share but they all fled my mind. That's why I'm glad I have this blog as a record, because otherwise I would remember nothing!
Big news....well, the boys started school. Leo actually seemed pretty cheerful about his classes. Owen, well, not so much. For some reason they don't get their schedules until the first day of school. I don't know...that seems crazy to me but we call every year because we don't believe it, but sure enough....not til that morning. So, unbeknownst to us...they are in the SAME class. Intro to Film or something like that I am highly amused. They seem somewhat surprised, but not upset. On the first day they had to name their favorite movie. Leo said The Empire Strikes Back and Owen said Annie Hall. My two boys, in a nutshell. Lord I love them.
AND, just now, we purchased a second car. We have wanted one and I was thinking a little old Honda or something like that. Ahem.
I give you...the 63 Volkswagen Bug....
I am ridiculously weak.
All three guys headed down to look at one in Knoxville, TN today. I couldn't go because I am swamped with work. It worked out nicely...the house is quiet so I just dove into budgets and websites and the like. Lots more to do tomorrow. I had hoped to go south for the eclipse but I doubt I can do it now. We shall see. Regardless...as Owen kept saying on the phone in wonderment, "We have a bug. We have a bug. We have a bug."
And on a last note....I made the best corn fritters ever yesterday. Three ears of corn...cut the corn off the cobs and mixed in several tablespoons of a mixture of cornstarch and potato flour. Then I added an egg and two tablespoons of fish sauce and mixed it all together before dropping them in a pan with some medium hot olive oil. You couldn't taste the fish sauce but it tasted like the corniest corn ever. Even Ernie, who is never enthusiastic about my fritter efforts, loved them. I must try again...maybe with a dash of hot sauce and some green onion???? These came out a bit dark, but trust me, they were delicious....
And in honor of the new bug, I will play my new favorite song.
