Fall: Back to Cooking

Not that I haven't been cooking but I've been somewhat uninspired. The Fall weather turns things around though. We recently signed up for a share in Sitka Salmon Shares and just got our first delivery. The Pacific cod we had last night was wonderful so I'm excited about it. At first it sounds expensive and then I think of what spend at the grocery store every month and it puts it in perspective. You get about five lbs of frozen fish a month...it comes out to about $15 per pound, which is about what you spend to get good quality fish. This month we got Pacific cod and Black Bass. I used a recipe off their site for the cod. It was just simply sauteed and then a sauce of lemon, butter, shallot, and chopped green olives. I'm cautiously adding fodmaps like shallots back in and am doing ok so far. To go with the fish I made a pilaf of sorts from tricolor quinoa, chopped tomato, chopped parsley, and pecans. It was pretty delightful.
