I always forget

I always forget how happy Ernie is if I make potato salad for him. I don't know why I don't do it more often. Please feel free to remind me. He loves it so much. And honestly, I make a totally plain Jane potato salad, but it make my boy happy and it's what I grew up with and love as well. Overcooked Russets for the win! Sometimes he does half of it and then thanks me anyway. This time I think the only thing he did was peel the eggs. Oh, and he got the chives from the yard. Thanks, baby.

We had some chicken legs we'd gotten from Triple S Farms. Ernie kept saying that he didn't know why he got a single package because there were only five legs in it. I told him five was more than enough, but I know what he means. We're still not used to not having Owen here to devour our food. I keep buying colored bell peppers and letting them go bad. Finally I realized that I feel like I need to have them on hand because Owen loves them so much. Note to self: only buy them when YOU want them.

Ernie suggested curried oven fried chicken. I think he was in comfort food mode. Fine with me. I often find that when using gluten free flour or cornstarch that things just don't brown as well. These browned like crazy. I'm thinking that it's because I didn't crowd the pan too much. Lesson learned.

I needed something green to round out things and I was feeling lazy, so we went with raw sugar snap peas on the side. They're ok cooked a bit but I love them raw.

Ernie's plate had a particularly large heap of potato salad. He's also rather pleased that, given we are hopefully going out of town tomorrow, he will need to eat ALL the leftovers today. God I love him.

Ernie's feeling much better. The moment I came downstairs yesterday I could tell he felt good. I'll take it.
