And Again
Thus far out Thanksgiving leftovers have been great. Friday night we all just scrounged leftovers. I made a turkey sandwich on some Great Harvest stuffing bread (flavored with sage, etc.) with a teensy bit of stuffing, lots of turkey and mayo and a bit of cranberry sauce. It was the stuff turkey sandwich dreams are made of. Last night we had potato soup. Ernie and I had a bit of miscommunication when packing up the food on Thursday night (and I think I was driving him crazy so he sent me out of the kitchen). Somehow all the leftover potatoes and gray got put away together. So yesterday I put them all in a pan, added a bit more turkey stock and some milk to thin it to a soup/stew consistency. Then I crisped some bits of stuffing, chorizo and fresh sage in a pan and sprinkled that on top. It was utterly delightful!
Today? We are roasting a turkey.
I kid you not.
I was so frustrated with my turkey on Thursday that when we stopped at Schnuck's yesterday and found fresh turkeys on sale for 69 cents a pound I insisted we get one. I am trying again to see how it turns out. I'm not stuffing it, I'm using the higher temperature (300 instead of 275) after the initial blast, and I'm using a butter rub. It's a hair under 20 lbs. Oh, and I'll be keeping the probe in it from the beginning.

I may be looking for turkey leftover recipes....especially because it turns out Owen may not be home tonight. Geesh.
My family seems to think I'm crazy.
